Prickly Pear Sour

INGREDIENTS

1 1/2 oz Prolijo Mezcal Espadín
1 Full Green Prickly Pear
1 oz Lemon Juice
1/2 oz Orange Liqueur
1/2 oz Agave Nectar
1 Egg White


METHOD

1. Muddle the prickly pear in a shaker
2. Add the rest of the ingredients
3. Dry shake
4. Shake with ice
5. Strain and pour into a coupe glass
6. Garnish with chile de árbol
